These cookies are grain-free, but all you’ll notice is the delicious taste! They are a crowd pleaser and kid favorite. This is an incredibly easy recipe, so if you’re a noob and you want to try something new, give these a shot. This recipe makes approximately 18 cookies, depending on how you size them. With the consistency of this batter, smaller cookies end up working better.

Ingredients:
3 c. almond flour
1/4 c. coconut oil, melted
1/4 c. unsweetened applesauce
1/2 c. raw honey
2 large eggs
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla extract
1 1/2 cups Enjoy Life Semi-Sweet Chocolate Chips
Instructions:
Preheat oven to 375℉.
Line a baking sheet with parchment paper.
In a mixing bowl, combine dry ingredients. Set aside.
In another bowl, beat the eggs, honey, and vanilla extract.
Pour wet ingredients slowly into dry ingredients and beat with mixer or fork until combined.
Add the applesauce and melted coconut oil and continue to mix until combined.
Fold in chocolate chips.
Drop balls of cookie dough onto prepared baking sheet.
Bake for approximately 8-10 minutes. Cool on paper or wire rack.
Important: Be very watchful about the baking time. 8 minutes is usually enough. If you let them go even a little bit over, they will burn, and you will be sad.
Substitution Alert: If you can’t eat applesauce, you can use 1/2 c. of coconut oil and omit the applesauce.
